Oven baked vegetables

I like to share a simple recipe that could be cooked by everyone with an oven. Not only is it a simple dish it is also a clean meal with healthy ingredients. Today I cooked ( or let’s say the oven baked) potatoes, carrots, green beans and mushrooms. Now this could be eaten as a main dish,  but it could also be a side dish. It depends on whether you like to add meat or fish to it or not. I decided to cook vegan today. If you take roughly 10 minutes to prepare the vegetables by cutting them into the right size, the oven will do the rest for you within 20 minutes. It is best eaten fresh and directly from the oven but you could pre-cook the food on a Sunday and store it for the next day for lunch. 

Preparation

First I peeled the potatoes and cut them into wedges. I also peeled the carrots and cut them into quarters. I choose fresh green beans, which are a better choice for the oven I would say, because they are dry and turn crispy once they are baked. If you choose to use frozen beans, you could try to dry them before baking. I peeled one onion and cut it into quarters and I crushed two garlic cloves. I had a few mushrooms left in the fridge, so they went into the oven too.

Seasoning

I would say the most important step for almost every dish is the seasoning. There is so much you can do right with a seasoning.. and of course wrong too. Now for these simple veggies I used a light seasoning because the heat of the oven and the vegetables just do their magic by themselves almost. I put in a bowl, olive oil, a pinch of salt, black pepper and thyme and mix it all together. Afterwards I put the vegetables separately into the bowl with the seasoning, let them rest for 2 minutes and place them on a baking tray. 

Once the veggies go into the oven for 20 minutes at 180 degree celsius , I just add a splash of lemon juice over the green beans and serve everything on a plate.
